The saffron plant, whose scientific name is crocus sativus l., belongs to the iridaceae family, which originates from western asia and is found spontaneous in the mediterranean countries. It is a herbaceous plant provided with a fairly large spherical bulb, of 3-5 cm of diameter, and about 2 cm of height from which the long, linear leaves emerge and without very intense green petiole collected in tufts of the leaf sheaths. The leaf sheaths allow the whole aerial part of the plant to come out of the ground almost completely developed and then, once emerged, the leaves are stretched out. The saffron flowers are reddish-violet in number 3-5 per plant, with a delicate, very long yellowish stylus, which ends with a stigma divided up into three parts, of orange color from which it is obtained the very precious spice. It blooms towards the end of october, a period in which the flower stigmas are collected, strictly by hand.
